10件の研究から得られた9,287人の大腸がん患者と9,117人の対照群を対象とした統合症例対照解析において、赤身肉の摂取量が四分位増加するごとに、大腸がんのリスクが統計的に有意に増加することが示されました。この解析では、食事因子と約270万の遺伝子変異との相互作用が検証され、赤身肉は遺伝子と食事の相互作用とは無関係に、疾患リスクと一貫して正の関連を示しました。
