Soy protein increases uric acid levels due to purine content

Soy protein preparations contain considerable amounts of purines, which are metabolized to uric acid in humans. Elevated serum urate levels are directly associated with gout risk, so individuals with gout or hyperuricemia should be cautious about high soy protein intake.

In the controlled human feeding studies, subjects consuming soy protein diets showed significantly higher levels of serum urate compared to subjects on casein diets. Caseinates are practically free of purines, while soy protein preparations, like meat and other protein sources, contain considerable amounts of purines. Uric acid is the end product of human purine metabolism. The prevalence of gout is directly related to serum urate concentration, making this finding clinically relevant for individuals at risk of or managing gout.

Plant protein intake shows no association with elevated uric acid levels

Unlike animal protein which is often restricted in gout management, plant-based protein sources may be consumed without concern for raising uric acid levels. This case-control study found no significant relationship between plant protein intake and serum uric acid, suggesting plant proteins can serve as safer protein alternatives for gout patients.

Case-control study with 46 subjects (23 with high uric acid levels, 23 with normal levels) at Banjarnegara Health Center. Mean plant protein intake was 46.6±17.98 g/day in the high uric acid group versus 41.9±12.21 g/day in the control group. Statistical analysis using Pearson product moment and Spearman rank correlation tests found no significant association between plant protein intake and uric acid levels (p>0.05). Multivariate analysis using multiple linear regression confirmed no relationship.
