Systematic review of 52 clinical trials examining dairy and inflammation found divergent effects based on health status. While the overall inflammatory score (IS) indicated anti-inflammatory activity for most subjects, stratification by health status revealed that subjects allergic to bovine milk demonstrated a pro-inflammatory response to dairy consumption. The IS was indicative of pro-inflammatory activity specifically in this allergic subgroup, contrasting sharply with the anti-inflammatory effects observed in subjects with metabolic disorders.
